It’s week 16 of the CSA, which means we’re in the last quarter of our season. This is the time of year when we start to return to cool weather crops, some of which you saw this spring, some of which are new. Crisp lettuce, leafy kale and mustard, and crunchy kohlrabi should be familiar favorites. New this week is rutabaga, a large, gnarly root that has been steadily growing in the field since the first of May. It is related to a turnip but has a creamier, more earthy texture and flavor when cooked. Rutabagas are high in Vitamin C and can be scalloped, baked into chips or fries, mashed like potatoes, orglazed with cider and roasted with other root vegetables.
